Recipes

I'm looking for some good, easy and healthy crockpot recipes. Anyone have any they can share?

Hey Rocky. Here is one of Nathan's favorite chicken recipes for the crockpot.

Crockpot Italian Chicken

4 boneless skinless chicken breasts
1 envelope Italian dressing mix
1/2 Cup Water
8 oz reduced fat cream cheese (cut in chunks)
1 can reduced fat cream of chicken soup

1 4oz can of mushrooms (optional)

I spray the crockpot with Pam to make cleanup easier.

Place chicken in bottom of crockpot. Add remaining items to top of chicken. Cook on low. (I start this in the morning before work and it's ready when I get home). Stir to mix the cream cheese into sauce.

Serve over rice or pasta.

I usually make egg noodles. That's Nathan's favorite way to eat this.

Do you put the chicken in raw, or cook it first?

Put the chicken in raw. Actually, since it cooks all day, you can put the chicken in frozen, which I've had to do many times because I'm so bad about remembering to get food out to thaw. The chicken is so tender you can easily cut it with a fork. Nathan doesn't like extra sauce on his (just however much is on the chicken when I pull it out), but he mixes the chicken with the noodles. I personnaly love the sauce so I spoon extra on the noodles. SOOOOOO GOOD!
